There are a few theories with regards to why dolphins flip their food out of the water like this.

It looks like they’re playing, and occasionally that’s all it is- other times it’s to break the fish using the surface tension of the water.

Smaller fish will get swallowed with ease under the waves, bigger fish need to be broken down and “measured”
If a dolphin were to make the mistake of swallowing a fish too big, it could become lodged in its throat.

It wouldn’t choke, their breathing has nothing to do with their mouth, but being unable to swallow any more food would be problematic to say the least.

Dolphins are extremely complex animals, so please keep in mind that these are just theories.
